... and for those that like to kick it up for Cinco de Mayo--
Chili-Lime Roasted Peanuts(from an Associated Press food article)
2 tablespoons peanut oil
2 tablespoons lime juice
1/2 teaspoon chili powder
1 teaspoon cumin
1 tablespoon sugar
2 tablespoons kosher salt, divided
4 cups roasted shelled peanuts, unsalted
Preheat oven to 450*F. In a large bowl, combine the oil, lime juice, chili powder, cumin and 1 tablespoon of the salt. Add the peanuts and toss well to coat. Use a slotted spoon to transfer the peanuts to a 9x13 baking dish (glass preferred) and arrange them flat.
Roast the peanuts for approx 10 minutes, stirring at both the 4-minute and 8-minute marks until dark but not blackened, watch carefully as oven temperatures vary. Remove from the oven and sprinkle in the remaining tablespoon of salt. Let cool to room temperature before serving.
